Salmon Arugula Salad, Low Carb, Balsamic

This is a great summer salad I enjoy regularly, made with salmon with full fat dressing and topped with Trader Joe’s new Balsamic glaze. Yumm!

This was taken during year three and holding of my low carb lifestyle. It’s been working great for me, and my yearly lipids blood tests back it up, along with the weight maintenance.

The science of this approach is best explained by Gary Taubes, a New York Times science writer, author of "Good Calories, Bad Calories." Recent science is also pointing to sugar and refined wheat flour being the true culprits of heart disease, due to inflammation.
